Apple Cider Vinaigrette

This is the basic salad dressing that I use for all my lettuce based salads. When it is summer I make it in 32oz batches and use it throughout the week. When the weather is colder, we eat less salads, and I will make a smaller batch. And if I am in a real hurry I will just add the individual ingredients to a salad and mix it around (you get the flavor but not the creaminess).  

Recipe Note:

Bragg’s Apple Cider Vinegar is by far my preferred apple cider. It is organic, raw, and unpasteurized. This means it not only helps balance the pH of the digestive system but also has raw enzymes and gut-friendly bacteria that promote digestive health.

You will need a water-tight container to shake the dressing in. My preferred container is an empty Bragg’s Apple Cider Vinegar bottle, because it’s free, pours well, doesn’t leak, and can be recycled when it gets mucky with oil from inevitable salad dressing drips. They also come in either 16oz or 32oz sizes that make the math for the recipe simple.

Since the oil for this vinaigrette is olive oil, it cannot be refrigerated. It will last a week or two on the counter, so only make what you will use in about a week.

Ingredients

1 part Bragg’s Apple Cider Vinegar

3-4 parts olive oil

Salt (1 teaspoon per 8oz vinegar)

Pepper (1/2 teaspoon per 8oz vinegar)

Instructions

Combine all ingredients in your container.

Close the lid tightly

Right before dressing your salad, shake the container vigorously. The two layers (oil and vinegar) should blend into a single uniform mixture. 

Additional Notes:

You can experiment by adding dried herbs and spices to the vinaigrette. Garlic or onion granules, basil, oregano, rosemary, and red pepper flakes are a few possibilities. 

For the super-quick version make your salad in a large salad bowl. Sprinkle a little salt and pepper over the salad. Add a splash of apple cider vinegar and approximately 4 times as much olive oil. Toss the salad vigorously. The dressing won’t get as creamy as shaking it in a bottle, but you will get the same flavor notes with less advanced preparation.
